Healthy version of your favorite snacks

Healthy “Fries”



Salt, pepper, thyme (optional)

Olive oil (or vegetable oil)

Preheat Oven to 450

Cut potatoes into thin wedges

Toss in oil and mix in spices

Spread on a baking sheet

Bake for 20 min, turn halfway

Kale Chips



Salt, garlic (optional)

Olive oil (or vegetable oil)

Preheat oven to 450

Remove the core of the Kale and tear it into medium sized pieces

Toss in olive oil and spices

Spread on baking sheet

Bake for about 20 minutes, tossing once every 5 minutes to make sure it doesn’t burn

Take out when crisp but not burnt

Greens and Beans

Olive oil

2 Onion

4 garlic cloves

Red pepper flakes

4 cups kale

2 can cannellini beans (reduced sodium)

3/4 chicken stock

1.Heat olive oil and add onion and garlic- saute

2.. Add red pepper, salt and pepper

3. Add the kale and let saute until it cooks down slightly, then add the beans and chicken stock

4. Cover and let cook for 10 minutes
